Place the water, 200ml vinegar and bay leaves into a pot and boil for 10 minutes.

Place the mushrooms into the pot and allow to blanche for 3 minutes. after reaching boiling point again. 

Pour into a collander, drain and allow to cool.

Place all the remaining incredients into a bowl, mix and add the mushrooms.

Place into an airtight container and allow to marinate in the fridge for at least one day.

Chef's Tips

This dish willl last for 3 weeks in the fridge and tastes better the longer it marinates. 

This is a great option as snack for drinks or can be added to salads.
