What a wonderful project to be working on!
When i was first invited by the team at Kyriakides Mushrooms to join forces and create over 50 recipes with mushrooms, I thought it would be a massive task. I was however pleasantly surprised with the quality and variety produced by this most innovative group, it was very easy to create a large variety of fun, interesting and versatile dishes for all occasions.
As you will see, the recipes we created can be as a starter, canape, accompanied to any dish or as a main course.
Nutritional, easy to prepare and extremely easy to match with just about any flavors.
I hope you enjoy making these recipes as much as i enjoyed creating them!
Some info about Roddy
Restaurateur, self-taught chef, television presenter, teacher and contributor to Cypriot cuisine.
With three decades of experience in hospitality industry, Roddy Damalis is the kind of person who is not content to simply stand by and watch the pot boil.
As well as enjoying the continuing success of Ta Piatakia ( Little Plates ), his highly popular restaurant in Limassol which attracts both local and international guests, Roddy organises cookery workshops , presents a cooking programme on television and regularly takes part in international food shows. His numerous awards from gourmet publications are testament to the fact that Roddy is a major contributor to local culinary scene.
Guests at his restaurants have always claimed that part of their ongoing attraction to his food is that he makes them feel like they are a vital ingredient. From the moment they meet one of Cyprus' most dynamic food personalities, they are caught up in his warm enthusiasm and this invariably leads to a new friendship and interest in food.
As a result of these friendships and the deep involvement and enjoyment of both Roddy and his guests, the food of Roddy's beloved Cyprus is evolving as a contemporary modern product, succesfully combining international food trends with the traditional recipes of the island.
