Preheat oven to 200° Celcius.
Wash the lemon well. Slice the chives and tarragon.
Add the mushrooms in a bowl along with cauliflower, cherry tomatoes, chives and tarragon.
Use the lemon we washed previously to add lemon zest. Slice the lemon and add some lemon juice.
Drizzle with olive oil then add salt, pepper to liking and toss until well combined.
Transfer the vegetables to a baking sheet.
Cut the garlic in half before adding it to the baking sheet as well. Add rosemary and place in the preheat oven. Roast for 20 to 30 minutes or until mushrooms are golden brown and cauliflower is fork tender.

You can prepare this wonderful dish using button mushrooms if portobellini mushrooms are not easily available.
Oh and you can garnish with fresh parsley before serving to add even more freshness to your dish!
